Casey's visionary approach to gin-making combines tradition with a modern flair, setting a new standard in the industry. After living with chronic health issues and allergies to gluten, wheat, dairy, etc. Casey set her sights on creating a spirit that brings a health forward approach to a modern take on contemporary gin. She selected potatoes as a base for this gin, in order to allow those with similar sensitivities to enjoy Intuition without concern for adverse reactions.
In addition to choosing potatoes as the base, she never had a true love for the traditional gins. As a result, she desired a flavor profile that combined gut-friendly and anti-inflammatory botanicals, with a floral and citrusy palate in order to minimize the "Christmas tree" taste. This would allow for the true flavor of the botanicals and herbs to shine, and finish with a smooth mouth-feel.
During every step of the process, Casey has truly been following her own intuition and setting her sights on the future with alternative versions of this innovative spirit. By keeping health at the forefront, her pipeline of partnerships and gin iterations will continue to disrupt the industry, and reshape the way we view gin and the beauty of its botanicals.
